Greek Shrimp Dish From Santorini

You feel yourself at Santorini with this easy and delicious Shrimp recipe.

 The Greek Island, Santorini has picturesque sunsets, iconic white-painted buildings, and Fine wine. And all of these are the perfect accompaniment to Shrimp Santorini. 

Ingredients

  • 1/4 cup butter 
  • 2 tablespoons garlic, minced 
  • 1 bunch flat-leaf parsley, chopped 
  • 2 pints grape tomatoes, halved 
  • 1/2 (750 millilitres) bottle of dry white wine 
  • 2 pounds peeled and deveined medium shrimp 
  • 1 (4 ounces) container of crumbled feta cheese 
  • 2 lemons, halved 
  • 2 sprigs of fresh parsley.

Instructions

In a saucepan, melt the butter over medium heat. Add the garlic, tomatoes, and chopped parsley; then add the wine.
Simmer, reduce the heat to low, and cook for 1 hour, occasionally stirring, until the sauce is slightly thick.
Preheat the oven to 250 F (120 degrees C). Add the shrimp to the tomato sauce and stir. Cook for 2 minutes; remove from heat. Pour the shrimp and sauce mixture into a shallow bowl for baking in the oven, and sprinkle the crumbled feta cheese over it.
Bake in preheated oven until feta is melted and the shrimp is white and not transparent; bake for 45 minutes to 1 hour. Squeeze the lemon over the shrimp and then garnish with parsley to serve.
