Chunky Salsa Fish Skillet

Ingredients
1 pound of halibut steaks (or any other firm white fish like cod), about 1 inch thick each.

canola oil, divided
2 medium yellow squash, julienned
1 medium zucchini, julienned
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1/4
tsp
ground cumin
1 1/2 cups chunky salsa
4
tsp
chopped fresh cilantro leaves
Instructions
First, you julienne the squash and zucchini any way you like.
Stir-fry halibut in a large nonstick skillet in 3
tsp
hot oil for 5 mins or until halibut steaks flakes easily with a fork, remove and keep warm.
Add the yellow squash, zucchini, mushrooms, garlic, cumin and remaining oil to the pan; Stir-fry for 3 mins until vegetables are crisp-tender.
Return halibut steaks to the pan.
Add salsa; heat through.
Sprinkle with cilantro.
