Chunky Salsa Fish Skillet

Ingredients

  • 1 pound of halibut steaks (or any other firm white fish like cod), about 1 inch thick each.
  • 4 tsp canola oil, divided
  • 2 medium yellow squash, julienned
  • 1 medium zucchini, julienned
  • 1 cup sliced fresh mushrooms
  • 2 garlic cloves, minced
  • 1/4 tsp ground cumin
  • 1 1/2 cups chunky salsa
  • 4 tsp chopped fresh cilantro leaves

Instructions

  1. First, you julienne the squash and zucchini any way you like.
  2. Stir-fry halibut in a large nonstick skillet in 3 tsp hot oil for 5 mins or until halibut steaks flakes easily with a fork, remove and keep warm.
  3. Add the yellow squash, zucchini, mushrooms, garlic, cumin and remaining oil to the pan; Stir-fry for 3 mins until vegetables are crisp-tender.
  4. Return halibut steaks to the pan.
  5. Add salsa; heat through.
  6. Sprinkle with cilantro.
